Healthy Recipe Loaded Potato & Chicken Casserole

Sometimes it is a struggle to eat healthy while on the go or living a busy life.  This recipes follows my dinner template of quick, easy, few ingredients, healthy, and tasty.  There are many loaded potato casserole recipes out there, this one still has flavor, but saves on some calories.  

Bacon- Less bacon, can sub turkey bacon or low sodium bacon pieces

Cheese- Half the amount of cheese, still has cheese in each bite

Loaded Potato & Chicken Casserole

Ingredients

6 medium potatoes diced (golden, white, or red work well)1.5 lb. cubed chicken breast

3 tbsp. olive or avocado oil

1 tsp smoked paprika

1 tbsp. garlic powder

1 c shredded cheese

1/8 c low sodium bacon pieces (or turkey bacon pieces)

*Chopped chives or green pepper

Directions

Combine oil and seasoning in small bowl

Place cubed chicken and potatoes in greased 9×13 pan

Pour oil mixture over chicken and potatoes, mix well. Chicken and potatoes should be evenly coated

Bake at 400 degrees for 45-50 minutes (till potatoes are tender)

Sprinkle with cheese, bacon, chives. Bake for 5 more minutes.

*Recipe makes 6 servings

*Pairs well with roasted vegetables
