It pairs well with burgers, grilled chicken, pulled pork sandwiches, or just a refreshing summer side dish. This is the perfect time of year to find fresh cucumbers.
Cucumber Salad
2 sliced cucumbers (Seasonal vegetable at the Farmer’s Market)
½ sliced onion
1 c rice vinegar
3 tsp dill
Optional: ¼ c flavored vinegar (I used Strawberry Balsamic Vinegar)
First cut onion and cucumbers. Then, mix all ingredients together. Let salad sit in fridge for a few hours to chill and let flavors blend.
Other modifications:
Add diced cherry tomatoes
Add 1/4 c sugar
Add fresh basil

Another benefit to this summer salad is the lack of creamy dressing. This saves calories, but allows it to be out of the fridge for a longer period of time. If you are serving your family inside or outside, the Cucumber Salad is a great option.
