Trainer Recipe- Healthy Butternut Squash Mac and Cheese

Does your family love mac and cheese?  You are not alone.  Mac and cheese is tasty and family friendly.  But, it isn’t the healthiest.  Store bought mac and cheese has many different additives (probably no cheese) and can be caloric-ally dense.  Homemade mac and cheese can be very hearty and tasty.  Better ingredients, but still high in calories.  If you still want to enjoy some tasty mac and cheese, without expanding your waistline, try the recipe below.  Healthy Butternut Squash Mac and Cheese uses butternut squash for flavor.  This way you can have less cheese and pasta (two foods high in calories).  Try it out and let us know how you like it.

Healthy Butternut Squash Mac and Cheese

8 oz whole wheat rotinilife transformations personal training trainer recipe
½ c fat-free milk (or almond milk)
6 oz frozen packaged butternut squash (or fresh steamed)
1 c shredded reduced-fat Cheddar cheese
½ tsp salt
¼ tsp dry mustard
Pepper to taste 1 Tbsp Parmesan, freshly shredded
1 Tbsp bread crumbs

1. PREPARE 8 oz whole wheat rotini according to package directions.
2. SIMMER the milk with the squash in medium saucepan until combined.
3. REMOVE from heat and mix with the cheese, salt, mustard, and pepper to taste.
4. POUR drained pasta into 8″ x 8″ baking dish, stir in cheese mixture, and top with Parmesan and bread crumbs. Bake at 375°F for 20 minutes
