Life Transformations Personal Training clients have a treat in store for them the week before Christmas. We made some Cranberry Oat Christmas Cookies for everyone! Each year we make some Christmas treats to share with our clients. The Christmas Granola has been a crowd favorite, but we decided to try something different. After looking through the cook books, we came across some Downtown Lee’s Summit Cookie Walk Recipe Books. These books are filled with many great holiday cookie recipes from the local downtown shop owners. The recipe we chose is from the 2012 recipe book, courtesy of Blue Heron Design (super cute shop on 3rd street). Check out the recipe below!
Cranberry Oat Christmas Cookies
3/4 c butter (or sunflower butter)
1 c brown sugar
1 egg
1/4 c orange juice
1 tbsp. grated orange zest
3 c rolled oats
1/2 tsp ground cloves
1 c flour
1 c chopped cranberries
Cream together the butter and sugar. Mix in egg, orange juice and orange zest. Once well incorporated, slowly mix in flour, oats, and ground cloves. Gently fold in chopped cranberries.
Use two spoons to make walnut-sized balls of cookie dough, and place on a greased or parchment paper lined cookie sheet. Bake cookies at 350 degrees for 12 to 15 minutes.
