Lee’s Summit fitness friends, here is a new recipe by Molly Wichman at Life Transformations Personal Training. This one is healthy and easy to make. Our favorite type of recipe.
Have you ever thought, “I want to make this recipe, but it’s not very healthy.” Well, this is when I like to experiment. Sometimes it works and sometimes it doesn’t (just ask my family). This is where this recipe came from. On one of our first Fall-ish days, I thought soup sounded nice. After checking for a recipe and not finding what I wanted, I decided to experiment. Using ingredients in the fridge, I came up with the below. Try it out and let me know how you like it.
Chicken Enchilada Soup
2 c shredded cooked chicken
3 c cooked black beans
3 c cooked white beans
1/2 c salsa
1 c Plain Greek Yogurt
1 c cheddar cheese
2 c chopped kale
1 chopped onion
1 chopped green pepper
*Chili powder, garlic powder to taste
Place all ingredients in the Crock Pot on low for 2 hours. Enjoy! Can add a little more cheddar cheese on the top of each bowl of soup.
*This recipe has healthy ingredients, protein and carbs. No need to serve with crackers…just enjoy. Many of these ingredients can be found at the local Farmer’s Market.
