When looking on Pinterest for a healthy cookie recipe, I kept seeing recipes for Healthy Breakfast Cookies. There are many variations, but I took some favorite ingredients from different recipes and changed it up to come up with the below. So, if you want to try out something new, give it a whirl!
Recipe Healthy Breakfast Cookies
Ingredients
2 cups creamy peanut butter (or favorite nut butter)
1/2 cup honey
2 tsp vanilla
4 medium ripe bananas
1 tsp salt
2 tsp cinnamon
4 1/2 c quick oats
1 c dried cherries
1 1/3 c chopped walnuts
Directions
Preheat oven to 325.
Combine peanut butter, honey, vanilla, bananas, salt and cinnamon. Mix well with electric mixer.
Mix in oatmeal, dried cherries, walnuts.
Place tablespoon sized scoops on cookie sheet. (I used tbsp scoop)
Bake 14-16 minutes. Should be soft but slightly brown. Remove from oven and cool on cookie sheet for 5 minutes. Let cool completely on cooling rack.
Store in airtight container.
