It is the season of Lent.  While everyone observes Lent in their own fashion, many observe the tradition of fasting from dark and white meat at certain times of the week.  I have had a handful of clients ask for lent friendly healthy recipes.  So, here are some healthy recipes to try!

Lettuce Wraps

4oz tuna

2oz avocado

2 tbsp Fat Free Italian Dressing

Lettuce leaves

*Mix tuna, avocado, and dressing.  Spoon into lettuce leaves.  Enjoy!

 

Tuna Casserole

Ingredients

1 box whole wheat pasta (cooked per instructions. Rotini and penne work well)

2 c plain nonfat Greek yogurt

½ c milk

1tsp ground mustard

1.5 c frozen peas and carrots

2 cans drained tuna

1 c low fat shredded cheese

Instructions

Cook pasta per instructions.

In a large mixing bowl mix yogurt and milk until smooth.

Add in ground mustard, peas drained tuna, mix well.

Drain pasta and stir with tuna mixture.

Mix in ½ c shredded cheese (reserve ½ c cheese for top)

Pour into greased 9×13 baking dish.

Top with remaining ½ c shredded cheese

Bake at 350 for 30 minutes.

 

*Can freeze leftovers

 

Other Ideas

*Baked tilapia or salmon

*Your favorite pasta or zoodles topped with tilapia or salmon (or other fish)

* Egg scramble (eggs, peppers, cubed potatoes in the skillet)

*Scrambled eggs and oatmeal pancakes (breakfast for dinner!)

*Hard boiled egg sandwich

*Healthy tuna or egg salad.  Sub plain Greek Yogurt for mayo.  Eat as sandwich, with wheat crackers, or veggie sticks.
