Life Transformations Personal Training in Lee’s Summit, MO shares healthy recipes for our clients and the community.  It’s cucumber season!  Do you need something to do with your extra cucumbers in your garden or farmer’s market?  Here is a healthy idea.  This Healthy Cucumber Salad recipe is a great option.

INGREDIENTS

  • 1 sliced red onion
  • 1 tbsp. apple cider vinegar
  • 2–3 cucumbers, thinly sliced
  • 1 cup plain Greek yogurt 
  • 1 tbsp. fresh lemon juice
  • 1 tsp garlic
  • 1/4 cup chopped dill

DIRECTIONS

  1. Place sliced cucumber and onion in a large bowl.
  2. Combine vinegar, Greek yogurt, lemon juice, and dill. 
  3. Pour liquid mixture over cucumber and onion.
  4. Toss together, add salt and pepper for taste
  5. Refrigerate for 30 minutes before serving.

 

*Pairs well with grilled meats or for a BBQ
